What You Need
250 grams pasta, your favorite shape
300 grams asparagus spears
175 grams frozen peas
1/2 lemon, juiced and zested
100 grams softened cream cheese or goat cheese
garlic, amount you prefer (we like a lot), minced
salt and pepper, to taste
chives, for garnish
What To Do
Bring a pot of salted water to a boil and cook your pasta according to the package’s instructions, subtracting two minutes from the cooking time. In those last two minutes, add in the asparagus and peas, bringing everything to a boil.
After everything has boiled together for two minutes, strain out the pasta and vegetables, reserving a cup of the pasta water before fully draining.
Put the pasta and vegetables back into the pot and mix in the lemon zest, cheese, and the garlic, as well as salt and pepper. Stir in a bit of lemon juice, taste, and adjust according to your preference.
If needed, you can add pasta water 2 tablespoons at a time or as needed in order to loosen up the sauce.
At this point, you can sprinkle on chives for garnish, as well as any other toppings like red chili pepper flakes, more lemon zest, or grated parmesan.
