It requires just 4 ingredients that most of us always have on hand, not to mention that these cookies are simply irresistible. Best of all, they’re so easy to make, take max 15 minutes total, and require minimal dirty dishes, which is the biggest win of all.
Ingredients:
1 cup peanut butter, any type
1 cup sugar, any kind you prefer
1 egg, preferably large
1 tsp. vanilla extract
Directions:
Preheat the oven at 325 degrees Fahrenheit. Stir the peanut butter, sugar, egg, and vanilla together in a large bowl. Mix well until the ingredients are well combined.
Shape the dough into balls that are about 1-inch in size, then place them on baking sheets, making sure to keep them about 1 inch apart, since they will expand.
You may decorate these with the tines of a fork, if you’re feeling a little fancy! Bake the cookies for 15 minutes or until they have turned golden brown.
Here comes a very important part: allow the cookies to fully cool down, otherwise they’ll crumble into a mess. This recipe yields about 24-30 cookies, depending on how large you form the dough balls.
Variation ideas:
You can mix things up a bit by mixing in chocolate chips, toffee bits, chopped peanuts, almonds, walnuts, butterscotch chips, or pretty much anything else you can think of — we recommend 1 cup of add-ins with the recipe above, but you may adjust accordingly. You can also finish off the cookies by topping them with flakey salt, sugar, or even peanut butter cups. Feel free to get as creative as you’d like.
